Now that the weather is getting warmer there's nothing I like better than to fire up the grill and host a backyard bash. And a juicy steak is my go-to for the star of the show. Seasoned with salt and pepper and cooked to perfect medium-rare it turns out so tender and delicious. But sometimes I like to mix things up. That's why this Grilled Steak Salad recipe is my new favorite. An east upgrade takes it over the top.
Marinades are an easy way to add bold flavor. The acidic mixture helps break down muscle fibers in meat. We use store-bought salsa mixed with cilantro, olive oil and red wine vinegar. It does double duty as the marinade and dressing for the salad. We combine the greens with creamy avocado, cucumbers ribbons, grape tomatoes and heart-healthy kidney beans. To prep the cukes, simply run a vegetable peeler along the veggie to create thin strips. Give it a try and let us know what you think.
